Don't know what came over me today. Made bacon and cabbage with champ and soda bread and had the kids rolling their eyes at me. They also did the twirly fingers at the head bit so I made them listen to Microdisney and Fatima Mansions.
For afters they had The Pixies.
They all wanted seconds. Nothing better sham!

I might have been. Cork,Cork and Cork again bhhhooooy. Cathal Coughlan was the lead for both anyway.
I actually found cassettes (remember them?) of a couple of their albums and subjected the kids to them.
We have a veritable archive of cassettes and vinyl.
Hmmmm, champ. Never make it but yet it holds a kind of mystical nostalgic appeal for me.

'Twas my maiden effort and it came out a bit too creamy for my liking. I bunged it in a casserole dish and baked it for a while to dry it out some and it was delicious.

Champ is usually associated with the North of Ireland.Basically you boil some scallions in milk and then add freshly mashed spuds and whip them up.Add a bit of salt and pepper.Nom.
Simple food but very,very good.
